Redacted are proud to offer you a glimpse and taste into a bygone era of whiskey in Ireland with the introduction of Vatting #37. An exceptional Double Pot Distilled Irish Whiskey from the Blackwater Distillery in County Waterford.
This unique blend of whiskies emerges from a quartet of distinct casks, each contributing to a unique balance flavours. Composed entirely of Irish-grown grains, the mash bill includes 5% rye, 15% oat, 10% wheat, 35% barley, 30% malted barley, and 5% Irish turfed malt.
Once the casks are vatted together, the whiskey is then artfully diluted and re-casked following a further 12 months finishing in a Widow Jane Bourbon Barrel.
Why the addition of water, you ask? It's science!
As Peter Mulryan, esteemed author, historian, and founder, explains, "Whiskey that is lower in alcohol will leach more easily from the wood, so the idea was to let whiskies marry in the best wood we could find."
No doubt your eyes are struck with stunning artwork! Created by the incredibly talented Kathi Burke, hailing from Waterford. She drew inspiration from the source of the Blackwater River, creating a one-of-a-kind piece that truly captures the spirit's essence. A masterpiece indeed!
