"The first ouille blanc from the domaine is the 2019 L'Etoile Chardonnay La Chaux, a wine that matured for two years in topped-up barrels that didn't develop flor. They started producing this wine in 2017 from a vineyard planted in 1990 on sandy and stony soils. It's varietal and clean and still has a spicy twist reminiscent of the yeasty wines from the domaine. It's floral and herbal, quite straightforward, with a light palate."
